Processing of Mango Pulping

Mango pulp requires numerous processing stages. Pre-sorted, fully ripened, firm and sound mangoes are washed in washer for elimination of any mud, stems, leaves and foreign particles. After washing mangoes are fed to the sorting conveyor where unwanted mangoes are discarded. Good quality mangoes then pass through a brusher, where rotating nylon brushes remove all external impurities and at the same time shower washing makes mangoes perfectly clean. By means of an elevator, mangoes are fed into the destoner for the separation of peels and stones.

 

After removal of the stones and peels, the mango pulp goes inside the thermo-break where it is heated up to 90 degree to soften the tissues and to stop the enzymatic activities. The cooked pulp is transferred to the super Refiner where pulp is passed first through the sieve of 1.2mm mesh and then 0.5mm mesh. It gives the pulp a very fine homogeneous creamy texture. Now it goes into the storage tanks and transferred to the darter.

 

Desecrated pulp enters into the tube in tube heat exchanger where it is sterilized at 90 to 100 degree . Immediately after sterilization the pulp enters into the cooling section of same heat exchanger and cooled down up to 30 degree to 35degree. Cooling is essential to save the pulp from browning. The sterilized & cooled mango pulp now enters in to the highly sophisticated aseptic filler where it is filled in 220 Kg 4 layer aseptic bags in drum and stored at 5 degree to achieve a longer shelf life.
